Loose hose
I recently found this hose coming off the carburetor (I think it’s the carburetor ¯\_(ツ)_/¯). I am knew to the whole project car thing. I can’t seem to find the hose or where it connects on any diagrams on the web. I’m hoping someone can help me on here.

There's a vacuum diagram on the underside of the hood, drivers side that should tell you where that one goes. Otherwise there are lots of useful guides online as well as factory service manuals.
Short answer, I don't know exactly without looking at my car and seeing where that hose goes to (which I can do later but you will probably get a good answer sooner). Probably the farthest left nipple on the vacuum rack when viewed from the drivers side. I see everything else plugged in.

OK, at first I thought it was the hose that connects to the 90 degree nipple on the front of the carb to the farthest left nipple on the rat's nest, the red hose in Max's diagram and the one I marked in the photo below:
But on closer examination of your first photo I can see the hose connects to the carb near the center and bottom of the carb, not the 90 degree nipple coming off the front, like the hose I marked in my photo does (you can also see this tube attached to the 90 degree nipple in your first photo).
So the nipple at the lower center of the carb where your unconnected hose connects is not a vacuum connection at all, it's the cold assist port used to squirt antifreeze into the carb on cold mornings. The tube would have run to a reservoir mounted on the passenger's side firewall near the windshield washer fluid reservoir.
If you don't use the car in cold weather you can just cap off the nipple on the carb (like I do here in Georgia) and remove all the cold start assist apparatus. Cleans up under the hood and one less thing to worry about.
