i have an 85 GSL-SE and the oil pressure generally stays between 55-60 psi at an rpm range of 2500-3000. this is using 10W-30. It does increase to over 60 when rpms climb over 3500. I have driven it like this for a year without any problems. Using 20W-50 might increase the oil pressure a bit. I did see pressure drop to 50 psi at higher rpms when i had a leaky oil cooler. So you don't need to worry too much about it.

Mine will go up around 70 psi when cold but definately wants to settle around 60psi when hot. the haynes manual says 62-84 psi at 3000 rpm. I am not sure if that applies to only 12A motors or not. I read some info on atkinsrotary.com which said the bare minimum pressure reqd was 15 psi. What weight oil are you using anyway?

Any chance of a pressure loss accross the oil cooler? what is the oil pressure at idle when warmed up?
