What type of Oil Temps are you seeing?

Hey Guys,
I just installed some defi gauges after my rebuild and have been watching the gauges now the oil temp sensor in on the oil filter pedestal, i dont have previous readings to compare them with but im get around 190F on the oil just crusing around but it goes up when you get on the freeway i pulled off when it got to 230F and then it drops back to the crusing figure, if i stop at traffic lights or park up it will drop to 185F now i had the oil cooler flushed and im getting very good oil presure so i presume the thermostat in the cooler must be opening as if it was blocked the oil presure would be very low correct? Im currently running in the motor if that makes a difference and the timing has be retarded. The oil temp really only goes up on the freeway and i dont have the factory under tray it never came with the car and the orginal motor popped a couple of Apex seals.
Water temp also goes up a little on the freeway but i have a large electric fan running all the time with a Koyo radiator. Oil is 15w40 Pennziol Mineral which im changing shortly to a 15w50 Mobil Mineral. This may have a small effect im told as the oil gets very contaminated when breaking in a new motor
Im a bit concerned as im not sure what the temps will get to when i give the car a bit of **** but because im running it in i cant tell at this point, im looking into getting a vented bonnet but i would be very surprised if this is the cause, any ideas would be great guys.

For fd's the factory undertray is a functional element in the cooling system. If your car is w/out it, the air will skip the radiator and just flow under the car. Once intalled, make sure it makes a tight seal against the radiator, especially at the rear of the tray, where a flap that seals against the full width of the radiator will sag down with time.

Don't forget that you're running flat out with minimal airflow relative to an open track.
Rallycross is worse - full throttle and you're only slogging along at 30-45mph and half the time you're sideways anyway. I've seen 220+ in the summertime on a 30 second course.
