Just spent the last couple weeks in Hawaii so i havent done anything car related for a bit. Had to do some work in the garage so decided to take her out for a quick spin and enjoy the nice weather we have at the moment.

Good intel. I wonder why it is presented that way. Maybe the R-magic sticker reads "Jo Bounds", an obscure sub-brand.
Meanwhile, is "RE Wing" a sub-brand of RE-Amemiya or something separate?
Hard to say, but I'm leaning toward a replica based on the description being "Original Carbon Bonnet Type 1" on the yellow one. If it was RE-Amemiya, there's more than enough space to put the proper company name there.
With more version 4 RHD coming in and some Version 5 cars now reaching the 25 year rule, owners should be aware that for Version 4 and younger cars Mazda changed the position of the coils. If your mechanic (or you) is/are using the USDM FSM, there is a rick you could hook up the leads from the coil sto plugs wrong. In the worst case a leading coil could get hooked up to a trailing plug, causing early detonation.
Lower diagram is the new set up, upper is the old.

Awesome, I have a few friends that live down there. We definitely need to get together sometime. We've been trying to make it out to more car events but are always super busy with our kids extra curriculars.

I'm always down. Currently struggling with TPS adjustment as I've not done this before and want to sort it out before driving her too much. Happy to provide pizza/beer/gas money if you know anyone who can help 😅 Always happy to return the favour/help others when I can as well.
Still stock ecu? If you have a power FC ecu with commander you can see the TPS ranges very easy on one of its pages.
If you still have the stock ecu, learn to runs codes off the diagnostic plug using and LED light (with resistor) and jumper wire.
I do not know if there is a code for a faulty TPS, but it will show you possible other issues you may have.
Stock ECU, ran through the LED check and got nothing. All my symptoms are exactly as described by OP here and I'm trying to get a reading and adjust but my multimeter (and neighbour's) isn't giving a reading. I'm stumped and Kilo's shop doesn't have availability until the 27th

Where are you taking the reading and have you tested the multimeter on the battery first to see if you get the correct reading? A lot of times its very hard to get a reading with the multimeter probes on the smaller wires without damaging them. These Tee Pins come in very handy for connector probing. You insert the Tee Pin into the back of the connector where the wire goes in and you can take your reading on the pin rather than having to poke a hole in the wire itself. Works great if you have the alligator clips with your multimeter too. You can find these at Michael's or other craft stores or get them on Amazon.

I have tested it on the battery and it reads fine there. I've got back probes I've been using the same way you've described - right into the back of the connector Saw a couple of guides on YT do it the same way and get readings without an issue.

I would pull the connector off then and measure for the reference voltage (I believe its 5 volts) and wiggle the harness around while you measure to see if you may have a break somewhere. See if its just pin placement or something else is going on.
Got out to Alouette Lake for our annual Veteran's Day Weekend dip.
Made it a 260 km journey coming back through Mission and Langley. RX-8 buddy added some colour. Fresh from taking a dip. Blast of late autumn colours. Stopped at Saba's in Fort Langley to fuel up for the run back into town on the dark rainy freeway. Fuel for thought!
Despite the low price for these, they are likely longer than 150 cm and so would not qualify for seamail. Maybe as much as $800 to ship by UPS, DHL or Fedex.
I picked these up for C$11 (Canadian dollars eleven.)
I bid through Jesse and he quoted me shipping before placing bid.
Including domestic shipping of about $100 in Japan, all in shipping cost has come to about C$530. This is way down from quoted costs earlier this year.
