Does pre-mix smoke more?
Yes it will. Mine smokes a little on the initial start up just a little and then goes away after about 2 minutes of running. I am also catless too so this might be why I see the vague smoke too.
I've always read that you need to run about 1 oz of oil per gallon of fuel, and I've always found this to be too rich for some reason. I've always continued to do it for safety's sake, but it just seems like I get a constant haze behind my car all the time. The OMP doesn't smoke up the neighborhood when it's working properly. Is it just me or does it seem like 1 oz per gallon is overdoing it? Why the difference?

Yep adding stuff to the gas makes more smoke.
I quit adding MMO to the gas (8 oz per tank), now I have much less smoke in the morning and I don't need to clean the yellow scunge over the tail pipe every few weeks. Everything is much cleaner now that I'm back to relying on the OMP.
If you need to clean that yellow scunge over the tailpipe, isopropyl alcohol works well.

about 6oz a fill up here, sometimes I fill her back up when I have half a tank left and don't put any premix in it.
