Looks like a product of condensation in the filler neck mixing with the oil vapors. If your car runs fine just clean it out.

Moisture in your oil. A little is normal, but that.....

You may want to pressure test your cooling system

Seems the stuff I usually see is a light brown color...hence the “baby poop” comparison.

That does seem like a lot to me too. Is that what caused you to pull the neck?

You typically get some white froth in the oil neck from water in the air mixing with oil and vapors. If you have done a few short trips lately that can contribute, getting the car fully up to temp and driving will burn a lot of that crap off.

I don't think it's anything to get too concerned with, if you had a major engine problem it would be manifesting itself in other ways.

Clean it up and move forward.

Looks like moisture. It is extremely rare for these motors to mix coolant with the oil in a rotary. Only really happens when an outer coolant seal breaks above the oil pan or a freeze plug behind the front cover. Most likely you are not running the car long enough to warm the oil and evaporate the moisture.Do you have cooler thermostats by any chance?

my coolant level hasnt dropped a single mm in the past year nor has it changed color at all. i will do the test anyway though.

i pulled my motor out a couple weeks in prep for a big show out here. i needed to clean my bay and make it more presentable to be on display. i stripped the motor down to clean it and when i got to the neck, i was greeted with this...

well... whenever i start my car, its because im driving my car. its not often at all that i start it up and shut it down. even if i have to move it out of the way, i just push it. its running just fine and everything, its just this goop is crazy looking. it wasnt squishy or anything either. it was more like really hard pudding. i was able to pick that entire piece up off the floor and it held its shape for the most part.

when i rebuilt the motor last year, the irons were sent off to chipp motorsports to be "refurbished". they were lapped and heat treated, new freeze plugs and all sorts of stuff. my oil and coolant have been perfectly perfect this whole time, so i believe there is no mixing going on. i am using the factory thermostat for the coolant and am using a 180F thermostat for the oil coolers. so normal temps on that.

im not entirely sure what to do about the moisture situation on the oil cap. if its building up there then im sure its building up in other places too. my vented catch can set up is one line to the rear turbo oil drain and the other to the filler neck. im single turbo of course. if thats in any way relevant. if this is normal then should i just plan to remove my neck every so often to clean this stuff out?

Mine always has it too. Seemed somewhat normal after searching.
