Pro-Tip; use a wooden handle from a mallet and poke the skinny wooden dowel end into the center from the inside of the wheel. Whack the mallet head and it applies force to the emblem and it pops out the front (*have your hand on it to catch it). They have to come off during wheel mounting and balancing, and not all shops take the same care with removal. Installation involves a rubber mallet and tapping it back into place.
For filling the center caps, take a look at some of the self-leveling enamel coatings, which can be applied with small brushes and then allowed to set. This will replace the black around the MAZDA namesake, and sticks well due to tension across the paint, itself.

Mine don't pop out the front. The spring holds them against the wheel center. I use a pair of needle nose to pull the spring from the back and the centers will drop out.
I painted mine with some high temp black paint from another project and when they were dry I took a rag with some paint thinner and just wipe off the raised letters and the surround to get them looking like OEM with shiney logo and ring around the edges.
Yes, for SA's there are different style caps depending on which wheel you have. Regular waffles use a cap that installs from the inside. They have a small lip on the outside that fits into a counter bore in the wheel that prevents it from coming out from the front. Same cap is used on the 79 Limited wheel.
The steel wheels use a large plastic cap that just pushes on from the outside. So do the optional Keyhole rims, but these are shallower and made from metal. Both of these rim styles also use the shorter length lugs as compared to the waffles.
