Do you have a PFC? If so, get the Datalogit:

https://www.rx7club.com/power-fc-forum-47/how-make-fans-run-lower-temps-pfc-664168/

However, there is absolutely no reason to have the fans come on at 88C.

88C is about 190F. The FC Thermoswitch isn't going to switch the fans on that low. Honestly, there is no point having the fans come on that low.

From the cooling FAQ:
https://www.rx7club.com/3rd-generation-specific-1993-2002-16/big-fat-fd3s-cooling-thread-571088/

65C (150F): too cold. According to service manual, EGR valve is non-operational below 150F, "to improve drivability when cold."
82C (180F): getting warm. Thermostat begins to open, circulating coolant through the radiator. Some coolant is still bypassing the radiator.
95C (203F): fully warm. Thermostat is fully open, not bypassing the radiator at all.

However, IMO, its the oil temperature which should dictate when the car is ready to rip.

Yes, 120C is damn hot. If you see 115C, you need to start thinking about what to do. The question about just shutting the car off or not can be different depending on the situation:

If you are running the car hard, like on a road course; you should just back off and start coasting. The reason is, when you shut the car off, the water pump stops, your coolant & oil flow stops, you aren't moving the car so there is no airflow over the radiator and oil coolers to cool the car. That can actually cause the temps to increase and heatsoak. So, backing off reduces the load on the car, yet keeps the accessories running and you keep driving to allow the car to cool down.

Now, if you are just easily driving down the road and the temperature starts going up uncontrollably, then you shut the car off. The reason is that you were already driving easy so something is obviously wrong. Driving it easier most likely won't take care of the problem.

well my water temps are around 90-96 highway and 92-99 city.. thats looks good right?

im also single turbo and i have a fmi som my radiator is somewhat restricted to are flow, So i was wondering if i could make like a duct from the slapsh shield that covers the bottom of the engine that will direct air through my radiator......

Its always a good idea to provide the radiator unobstructed air.
