There are too many possible causes to diagnose with just this info. There are a lot of threads on coolant loss if you search.
However, a couple of possible causes:
1) did the coolant have enough antifreeze to prevent freezing? If not the rad could have frozen and blocked coolant flow, causing overheating.
2) is it possible the thermostat did not open?
3) was the coolant level OK when you started? No low-coolant light?

Warming the planet.
It's likely you overfilled the system, it also posable that the coolant is not being draw back into the cooling system on cool down. check the cap on the AST and the Hose from the AST to the overflow tank for leaks.

There is a dipstick (or there should be) with a lot of cross-slots in the overflow tank. The full mark is ~12-in below the top filler cap of the overflow tank.
It's really easy to overfill, especially if the dipstick is missing!
