find a nice performance shop or ship your car to IRP.
looking at the car, you 100% do NOT want to take it joes crab shack and AC. fitting a condensor and making the lines and doing everything needs to be handled by someone/somewhere that can handle a modified car and a really nice one at that. your ac set up is going to be all the way custom and it needs to be done correctly.

Also you will need to get a handle on what parts were removed and what parts are still there. It's a shame so many AC setups are now in a landfill.
Since you're going to be doing some custom stuff, I would look at using the RX-8 AC condenser. It has the receiver/dryer built into it so that simplifies the plumbing.
Read up on AC threads, there's plenty talking about the various parts of the system, the MANA/Denso differences, etc. Learn as much as you can and get as many parts as you can, that will save time and hassle at the shop.

I wouldn't stress too much about matching up fittings since any lines will need to be made new from whole cloth anyway. If the condenser has a different fitting type than the compressor then just use the correct type for the correct side of the brand new line.. speedjunkie has a good thread where he retrofitted the rx8 condenser in his FD.

Lots of FDs popping up in the Pittsburgh area this year. I'm sure there are quality AC shops around that could do it. But if you're looking for the sure fire, best place to take it, it's IRP.
They just delivered mine back yesterday. It had mismatched AC components, and they took everything back to square one and got it working. Even fitting it in with a Greddy v-mount. The day they dropped mine off, they also picked up another FD from Pittsburgh as well.

I have a call in to them, waiting for call back. Wish I could find someone closer
