temp gauge...
i have a weird issue, it seems as if when i'm driving hard in 3rd gear my temp gauge seems to go basically to the half point, and then will come down when i'm off it, i'm on a reman with 2500 miles, the cooling pan isn't installed by the way could this be the culprit? Other than the temperature is always safe. Could this be a quirk on my cars behalf or a serious issue?

Its a quirk of not having all of the items required to cool the engine.
Multiple threads on this will reveal you need:
Two belts on the water pump
Underpan
A rad with a clear core
OEM - functioning - termostat
(if present) a clear A/C condensor
No air in the system

i only have one belt on the water pump, since my air conditioning isn't hooked up and everything else i have except the underpan i guess i will be putting that on this weekend.

Tjeter, they are so right. Running with 1 belt on the Waterpump is a bad idea, only the alt/belt is driving your waterpump. so when u 'get on it' chances are u have some slippage.
With out the undercover, you are asking for the air to take the path of least resistance, under the car instead of through the radiator. My bet is a combination since it seems to be fine at idle and low speeds (when the fan is primarly responsible). Once u get up to speed, the fan is freewheeling more, and the forward motion is driving the air through the radiator. Please man if u want to keep your car running well put that Undercover back and get a dual groove pully, they are like 30 bucks. Cheap.

yeah see i was told by diff people that the dual alternator pulley was neccessary and then by others that it wasn't, and i meant to say i don't have my air pump belt or ac belt, when i go home to get my car i'm going to put the under pan on. Weird thing is my car never came with the under pan either.

While I understand what the underpan is and was designed to do, I can say from personal experience in a S4 n/a, S4 TII, and a S5 TII the missing underpan DID NOT cause a noticeable (gauge reading) change. I'm not saying that's not part of the problem, I'm only saying that in my own experience with 3 different cars, not having the underpan did not make 1 bit of noticeable difference. It's worth picking one up, they're cheap, and get yourself a dual alt. pulley. Do that and let us know if anything changed.

i'm going to, i have a underpan sitting at my house back in virginia, i'm in north carolina for college right now, i'll have to have the dual alt pulley sent to my college.. this sounds dumb but i'm having a brain fart am i going to have to restab the CAS?
