Yes it is possible to use harnesses with the factory seats, but you will only see a small benefit for track days because the stock seats are so flat.
Your best bet is to get an Autopower roll bar. I have one and it is pretty nice. The main hoop is far away from your head, so you won't hit your head on it in a fender bender. You can get it with a harness bar that would safely allow you to run harnesses with a proper seat.
They also offer a weld on kit to make it a full cage later on if you desire.

Check the race section for the sticky thread on cages. You can do whatever you want with cages and seats and harnesses. For a long time you had to use the stock seats in SCCA Showroom stock class(you might still, I don't follow SS at all).
Just find a way to brace the seat back if you keep the stock seats and use the harnesses. A cage is dangerous on the street for the possibility of hitting your head on it. They are not soft.

The one problem I have with autopower or basically any bolt-in roll cage for the FC is that it mounts to the floor in front of the rear frame rail that the storage bins sit on. By mounting the main hoop on the frame rail, you gain more room to move the seat back and get more weight on the rear wheels, as well as tie the chassis together better. Also, Jegs offers a weld-in roll cage kit for drag racing that with minimal modification works for road racing. It's a somewhat universal kit, though, so it must be cut to length and use a tubing notcher to cut the ends so they fit together.

Oh, and one of the forum members, Christopher W. is finishing his 20b GTUs, and he has a very well designed roll cage similar to what I'm talking about.

J-Rat: I was wondering if you had any comments on the jegs kit and if I could get some pics of your install, as I'm eyeing going that direction, but changing around the tubing a bit to make it SCCA legal.

Like someone mentioned above, the must logical place to put the main bar is on the cross frame instead of the flimsy floor pan area just ahead of that cross frame. That also makes the car more steetable with the main hoop being a little farther back from your mellon and a little extra seat/recline space to work with.
