The AEM UEGO controller is just a wideband O2 sensor/guage/output. You can tune based on it, and/or hook it directly up to your ECU and have the ECU adjust the tuning MAP according to the readings. You can also data log directly from the controller if you so wish. I have one along with my megasquirt and it outputs to the megasquirt quite well. It would also be good for simply monitoring how the engine itself is running if you do not own a standalone or piggy back.

so even if you plug it into the stock ecu it will read what the gauge says and adjust accordingly?

^ you cannot plug it into the stock ECU. The stock ECU only works with 0-1v signals. Other brands have a 0-1v output wire to emulate a stock O2 sensor. Either way though, the stock ECU can't just connect to a wideband and automatically just tune itself. That's not how it works.

Some people swear by the AEM UEGO, but it also has a reputation for being the least accurate and a higher incidence of electrical noise on its 0-5v output. If you ever plan to hook it into an EMS, I would stay away. If you just want a gauge to eyeball while you are driving around on stock ECU, go for it.

Personally, I had one and sold it. Mine had a bad display, and when I sent it back to AEM they sent it back to me without fixing it! Horrible service. I eventually got it working but it doesn't work well with the Power FC Datalogit box so I sold it and bought an Innovate. You can also try PLX, Zeitronix, NGK, etc

No, that is only a feature of some standalone ECU's and only operates under certain conditions for various reasons.

The AEM has a switch to adjust its analog output wire (the white wire I think) to output 5 different signals, two 0-5V lambda & Wideband signals, a linear 0-1V signal, a linear 1-2V signal, and a signal to simulate a standard narrow band signal. Maybe you had an older version that did not have this feature or something. Honestly, I have not had any issues with mine and my MS reads the analog output signal perfectly.
