Question good amount of torque from a single

I was wondering what you guys that have single turbos, and like to drive fast through twisty back roads or race autocross think is a good amount of torque. For drag racing all the torque is good, but when it comes to handling too much can get a little dangerous, as some of you have probably seen with some torque-laden V8s. I'm planning on getting a single but I was looking for advice for what power curve is nice for more handling than drag?

a linear 250-270rwtq is nice....that's around 330rwhp.....seq will have around that torque but the transition makes it kick in too hard.....

I guess it depends on what gears you are using and how much tire you have. My single turbo will have the back end come around at full throttle in 1st and sometimes 2nd when the boost hits around 3000-4000 rpms, this is with 275 street tires. I'm putting down around 300-325 ft lbs of torque.
