'89 N/A block off plates???

I recieved a new set of block off plates a while back in a trade that did not come with any information so I'm asking for some pointers.

I know one blocks at the air control valve, another is for the egr (I think) but I don't know where the others go or if I should even use them. Any input or opinions would be much help, thanks.

And, is anyone aware of a circle track oil pan or baffle plate or if the racing beat road race oil baffle plate is the best option out there?
