You could run a wire from the blue plug to the starter but this wire needs to also run to the ECU pin 3B (start signal) which also taps into a wire running to the Circuit Opening relay that governs voltage to the fuel pump. If you can find the Inhibitor switch and jumper the B/W wire to the B/R wire where the B/W wire comes from the Blue plug and the B/R wire runs to the starter solenoid, that would bypass the switch, but as a caveat, the car would start in gear in addition to just park and neutral.

I'll give that a go tomorrow (Leaving for work right now). Having it start in gear isn't an issue for me, I religiously pull the E-brake and check gear when turning it off, as well as hold the brake (while having the E-brake still engaged) when turning it on.

Took longer than expected, but got it fixed! I tried jumpering it, must have done something wrong. Ended up taking the entire inhibitor switch off, turns out the contacts in the middle of the ring were full of grit and grime and I assume there was zero contact being made. So I cleaned it up, cleaned up the bolt it rests on, plugged everything back in, and bam! Started right up.

Checked voltages at the B/W wire just to make sure, and it all checks out. About 2 volts on key to 'On', 12-13 on 'Start'. Turns out the battery was low (Might be a bad battery, going to have to watch that) and the starter wasn't dead anyway.

Going to drive it around some (being very careful to make sure it's all working then start on my swap.
