Things like hoses and water pumps can be purchased from an auto parts store. I suggest using only Mazda thermostats. You'll also have to go to the dealer for a carb rebuild kit and fuel sender.
The only to decarbonize an engine is to disassemble and clean it. Don't bother with "miracle" cures.

Malloy Mazda in Virginia is a great supplier of parts. You'll need to speak with the parts manager, Mr. Ray Crowe, as he's an expert with RX-7s. He gives great prices to RX-7 Club members, so mention that you heard of him through here. 703.490.8623
MazdaTrix is also a good supplier of dealership parts.

As far as regular parts, water pump, hoses and that kinda stuff, you can use any parts store... NAPA, Advance Auto Parts, RockAuto.com
I highly recommend using a Mazda OE thermostat though. There have been problems with cheaper Stant brand ones that you typically get form parts stores.
For Carb Repair, I recommend going through a member on this forum, Sterling... His company "Sterling Metal Works" does carb rebuilds including reworking the internals for more power... It'll take a little while for turnaround though.
The first gen section is pretty well stocked with knowledge. Check the FAQ, read up and search through the archives...
