I'm going to see and test drive a RX-7 on Thursday and i want to test the engine's compression. Can someone explain to me how I would do this?

Sorry, I'm still getting used to the forum. I'll make sure to run a search/browse next time.

My biggest question is, do you only have to remove the EGI fuse? That stops spark AND fuel injection? Also, why would the 3 bounces (while holding release valve) only read 30 psi but when the valve isn't pressed it reads ~100?

When the valve is pressed it is showing you PER FACE..and that the 3 bounces are indeed each rotor face and they are able to show compression.
You need to see three fairly even bounces.
If there wasn't 3 solid bounces then you would know that you have a seal problem.
When the valve is NOT held,it shows Overall compression of the 3 faces as it is just taking what the highest value is.

If doing this on an engine thats already been pulled, should i still hold the throttle plate open ? and a buddy of mine spoke of a check valve.. is the valve on the tester or engine?
I just purchased a 13b and when the guy did the comp check he did it no different from a pistion engine.. i could hear it "woosh woosh woosh" but he says it failed , low to none compression or improper testing :?

Right on, thank you. May just skip the compression check and go straight to the teardown.
