Where to start with tuning?

Trying to learn how to tune my S4 turbo. It's still in the break in stage so I have boost at 5psi and rev lim at 5500. I need a few pointers on where to get started. I've done a bit of study and understand the general principles and rules, but don't really know how to apply them.
Mainly I need some advice on how to get started with the following for now:
- Tuning idle. advice, guidelines. How you would go about getting a steady idle.
- Adjusting fuel map. advice/guidelines/boundaries. What afrs are safe boosting under 5 psi?
- Adjusting ignition. (Terrified of this one) advice/guidelines/boundaries

Engine details
Stock motor. TMIC. 550cc's. Running 9s and 7s.
No IAC as of yet. PO took them off because microtech (got elite 750 now)
Has some mystery hybrid turbo. The compressor says airesearch t04, everything else is unreadable and no tags.
LS1 coils.

Fuel
So far I've loaded in the 13b s4/s5 turbo direct fire base map and configured things like sensors, dwell, rev limit, tach, killswitch, etc. Everything but the stuff that actually gets the engine going.
The car runs very rich (bounces around 10.5 and 11.5 at idle) on the base map and hunts. It drives alright, but way too rich. I thought I would start with tuning idle though I need some advice on how to do it properly. I get it stable then when I rev it shifts to a stronger vacuum point that I can't stabilise. Then when I try and start the car again it wont start until I undo the map.

I haven't touched timing yet (kinda scared of it). The base timing looks ridiculously retarded to my amateur self, is it?

it really helps to have a method or a structure to tune the car. for instance with a carb, you start at idle and work your way up the rpm/load area.
the thing with EFI is that its like a ~24x24 map, or 576 cells, and then there are multiple maps, so you have to find a way to be efficient, or it just takes forever

so you might just do that. its also hard to hurt the engine at idle, so you can try different mixtures and timings and see what the thing wants.
(its also a spot that we have good info from the shop manuals)

Mazda divided the map into zones, and that might work for you as well. we know full throttle is ~11:1, we know the 1100-3500rpm area at part throttle is 14.7 +/-, etc
