The way *I* see it; if the thermostat opens at 180F, it means that the max water temp has been reached under normal conditions. Why would you want to run the engine hotter than that?
On the oil temps, with the stock intercooler, the oil temps stay around 180F under normal driving, why would I want it at 210F under normal conditions?

Just checked the configuration and they come on at 180F and off at 175F
BTW - Just checked the manual, and for the S5 FC, the thermostat starts to open at 177F - 182F and it is fully open at 203F.

Having the fan ON temp close to the thermostat opening temp will only cause the thermostat to flutter open and close - not a good thing.
Also, having the fan ON and OFF temps at a very narrow range will cause it to cycle a lot - not something I like doing either.
I typically have them set around 210F ON, 195F OFF...unless the customer wants it changed.
This is assuming the Haltech water temp is accurate - for some reason my E8 reads almost 20 degrees HIGHER than what my SPI water temp gauge shows.

Hey Ted speaking of the haltech sensor being off, check out this thread: https://www.rx7club.com/haltech-forum-62/haltech-metric-water-temprature-sender-544788/

When the e-fan comes on, I don't see any significant temp drop; it just stabilizes the temp to that range (under normal driving), so my guess is that you want to keep it at 2003F max. Am I wrong by following or triying to mimic what the thermostat is doing?

^effects flow. You want it fully open to optimize the flow thru the radiator...
I don't like cycling my fans constantly. I'm not worried running my car at 210F. A stock FD turns the fans on LOW above 220F. Do I want to do that, no.

I have my SPI water temp gauge.
I have the Haltech display.
I have a Raytek IR "gun" thermometer.
I'm going to taking some readings to see WTF is going on...
REMEMBER, these Haltech sensors *ARE* from *GM*.

I run no thermostat.
Most of the "race" cars I tune run a "cored thermostat".
I've had a lot of experience running these engines hot, and a lot of people cringe when I mention water temps.
I go with what I've experienced.
I know my engine makes funny smells once the temps start to edge over 220F.
I use that as a guide.
