Easiest way to control WMI is to run a solenoid where the + is one on side, and a DPO from the Haltech for low side control is used for a PWM map. A lot of this kind of stuff is in the Help section of ESP too.
Ethanol content / Fuel Temp, as Skeese mentioned, most of the OE style sensors (GM/Continental) can bring in both temp and eth %. That would be my route to go as the wiring is just 3 wires, and built in setup on the Haltech.
VSS - This can be pulled from the signal between the factory cluster and the cruise control computer. This is easily taped into in the drivers kick panel. There are quite a few posts on this topic on this forum. If not keeping your factory cluster, you could add the FD VSS sensor into the Turbo trans and pickup the signal there, by pass the cable driven speedo. Getting a front driven speed is a little bit tougher, unless you lucked out and have a factory ABS car with the sensors in the hub.
A/C request and output can be added to the Haltech. You will need to tap into the remaining connector from when you removed your factory ECU (which is part of the body harness that runs through the dash area).
Running this into the ECU gives you some additional flexibility, ie automatically turn off A/C under WOT, additional idle speed when A/C is running, etc.
