Just finished a rebuild and installed a new harness.
On the drivers side engine bay there are 4 spade type connectors of which I can find hook ups for. One goes to the starter solenoid, one to the oil pressure sending unit and one to a small sending unit beside the oil pressure sending unit.
So where does the 4th one connect?

Look at pages Z-42 and Z-43 in the wiring diagram manual.
On the engine there are 3 sensors with single spade connectors:
Coolant Temp (gauge) - C1-04
Oil Pressure - C1-05
Coolant Level - C1-07
The Coolant Temp and Coolant Level sensors plug into the emissions harness; the Oil pressure sensor plugs into the engine harness. There is another pair of spade connectors (C1-06) that transfers the Coolant Level signal from the emissions harness to the engine harness on its way to the instrument cluster.
As you mentioned the starter also has a spade connector A1-01 (from the engine harness) shown on pages Z-24 and Z-25
In case you have trouble reading the wiring diagram, the wires should be the folowing colors:
Coolant Temp sensor = Y/W = yellow w/ white stripe
Oil Pressure sensor = GY/R = Gray w/ red stripe
Coolant Level sensor = B = black
Emission harness connector C1-06 = B = black
Engine harness connector C1-06 = BR/W = brown w/ white stripe
Starter = B/R = black w/ red stripe

Have you run the car yet? Is your low coolant level buzzer going off?
There is a black spade that connects from the engine harness to the body harness for the coolant level.... this is in addition to the connection at the sensor itself over by the t-stat neck.
The third connector you mention is the water temp sensor for the OEM gauge.

If your buzzer is going off you either plugged the wrong connector in or none at all... Or you don't have coolant! I believe there's two of those connectors that look identical. There's a thread about this so keep searching
