ive heard, that it is a really good idea to get your radiator checked out cause they tend to get alot of buildup
and make sure you run a good mineral oil, oil is also for cooling purpose.

The water temperature gauge will sit at the middle until the car overheats and gets damaged. With an aftermarket gauge reading between 180F to 220F the stock gauge does not move on my car at all.

As for the coolant bubbling like mad, thats not normal as far as I know. Do you mean its boiling or hissing or ?

Caps

I had the same gurgling problem. Replaced both caps & problem disappeared.

Good luck!

Boiling noise on shut down is not uncommon, some if not all can usually be cured with "burping". Search using that term.
The stock temp guage is worse than worthless since if it moves off of roughly center, it's already too late. Get a decent aftermarket gauge.
If you just got the car, I'd recommend changing out the coolant, since you don't know how old it is anyway. Use green stuff (Ethylene Glycol) with as much DISTILLED water as you think you can get away with. Not sure about Ireland winters, but probably 60/40 water to coolant would work. Be sure to drain the engine block as well as the radiator. The drain plug is on the left side of the block.
