Patience...don't you hate waiting for your car to get running again? I don't think a turbo install is that difficult....i'd go to an rx7 shop rather then either or those your considering..

I can't think of a "nice" way to deal with a mechanic. A friend of mine is one of the best mechanics I know of and every time I get him to help me we have to set down parameters on how much I will pay him to use his time, tools and assistance. Even being so close to my mechanic hasn't really benefited too much. They see working on cars as a job. Think about it. They do this every ******* day. You also don't hang out with him like I do and probably don't see him till there is something wrong with your car. So just tell him in a polite, yet assertive, way that you are going to have to have your car and money back because you found a mechanic that has done this before. It is simple once you actually go through with it. You are being too nice to the mechanic. I hate to break it to you but you're being a girl, so be a man and take charge.

Tell him you found someone that has the experience you need, and don't want to pay for him to learn, unless he gives you a significant discount on labor,
I'd personally not pay him uless he's done, work, even then he's got your car to make sure you're gonna pay, and you have nothing to make sure he's going to work, so I usually get the work done, that way you both have something to gain by him doing the work quickly and by you funding his christmas wishes

Everything to install should be fairly easy aside from the injectors make sure they go in nice and easy becuz the only way to find out if they are gonna leak is to put everything back together and try'em but I had no problems putting mine in. Also the turbo kit should be pretty easy if you have all the gaskets just dont break any studs or bolts...

If he is not tuning the car. I would not worry too much about it. He is a mechanic afterall. I am sure he can do a basic install of a turbo kit. I would however take the car to a mazda tuner shop to have them tune, and look over the car once he is done with it.

Don't let a mechanic who has never done anything like that before do the work. If you blow any of that **** off or up (like the motor) you will be left out to dry.
