I have stock exhaust and turbos, and no doubt there are times I would not leave my palm resting on it. But it's not THAT hot. I can always reach down and open the latch without a problem.
If you don't have a hood liner buy one. About $120 from Malloy.
If you have a stock precat, get that out asap. If that's been removed, considering wrapping the downpipe and getting the main cat checked for clogging.

Most of the stuff is protected. You still get water in the engine bay when driving in the rain.
However, I would at least make an attempt to make sure that you don't have water landing directly onto your battery terminals and other other expose wiring connections.
