I run my fans on as soon as i see the gauge hit 160F (bad habit of mine) so due to that, i never seen it go past 210F, even in summer months. About 190-195F in normal driving with fans on in summer. Now its cooler so i would say 180-185F.

Might be luck, might be that im not pushing it hard enough to fully tell.

I'm running a Greddy 2 row and a Koyo rad, and the highest I see currently is about 185degF normal operating conditions. Under some heavy driving, they never get past 200degF..

Never beyond 200f, rarely above 190f.

I have the fans set at 170F I think. Car doesn't go above 180 after my new set-up.

Um, the car is not even at operating temperature then. The t-stat opens up at 180. Unless your car hits 180 and stays there.

So basically you're not cycling your car properly.
