Grounding-thickest wire best?

The large diameter only affects resistance when the wire is carrying a lot of current.
Except for the ground between the starter/battery, and alternator/battery, there simply should not be large currents in the ground wires. Since most people add their ground wires in addition to the stock wiring, it's still not a big deal unless the stock wires are damaged. All the other grounds can be substantially smaller. The kits you see will use the same size wire because it's easier to make and easier to sell.

copper wire de rates in mV/A/m. so the longer the run the more potential drop you will get. The smaller the core cross sectional area the greater resistance and the lower current rating.
