FD exhuast ?

First off, i like suttle cars so i obviously prefer sleepers and i don't like to draw unnecessary attention to myself ( in the wrong way). Right now my exhaust is stock....i like the way the stock cat-back looks but that isn't my concern, i was thinking about replaced both cats with a downpipe and midpipe...would this create an annoying amount of noise that would be unbearable during daily driving or would the stock muffler do it's job and keep it quiet?

go with a downpipe and a racing beat dual tip catback. keep your stock main cat on and stay far away from a midpipe. That is what I recommend for your application

i've heard of the problems associated with getting a midpipe, ie boost creep, but wouldn't an ECU be able to monitor and correct that problem?

DP / mettalic substrate cat / RB cat back.... very very streetable. You'll need some sort of ECU upgrade.

I run the setup recommended by GoodfellasFD3s and i can tell you that at low RPM's its relatively quiet. It is no where near as quiet as when I has the stock cat-back w/ just downpipe, but its MUCh quieter than the PFS or Apexi N1.

if you wan't quiet, keep the stocker on and just do the downpipe - it does a great job.

I just switched from Apexi N1 to Racing Beat Dual Tip, with DP. The car sounds so much better (if you are a sleeper guy). It is the closest you can get to Stock IMO~
And it almost sounds like exotics :P I would definitely recommend Racing Beat Dual Tip in your situation!

If you keep the stock cat, grind out the ID flange welds to open it up and reweld on the outside - AdamC idea.

I just went with the SR motorsports high flow cat. I had a DP and RB catback. The car is a little louder now but not bad at all. The SR cat is a just a 50 dollar CATCO so you can probably get a muffler shop to make one up for much less. Also, all of the highflow cats sold out there weigh much less than the stock piece.
