custom wiring harness questions

I am trying to rewire the entire main engine wiring harness on my car and I have all the plugs I think I need but I'm not sure what size gauge wire I need to be running. I know I should use the same gauge as factory but I cant figure out what that is. Also is there a specific brand or business I should buy the wire from. Any advice or help would be greatly appreciated. Thanks.

Before you go through the trouble, you might have better luck with rywire...

If your wires under black protection tape is in good condition ,who I believe that it is,then remove the oem protection tape clean the wires and use new technology high temperature tape, contact clean spray for connectors and you have with low cost new harness with all the oem connectors.
I have do mine with that way and after 4 years I have no problems.
Take a look at this 3m tapes super 33 or 88

If you are planning on tucking the main harness,(the hoop that runs around the front of the engine bay), you really don't need any new wire. I am currently doing this and am putting the fuse boxes & relays in the bin area and only had to extend a few wires, for the most part I had to shorten everything.

Also if you want connectors - you can always grab them from a junkyard for cheap. I'm repairing mines (soldering and re-pinning connectors), and wrapping it with some braided loom I had from my old car for a nice touch. Look for early 90's (90-95) Mazdas for connectors - you'd be amazed at what you can get and use. There was an old thread on here that had some detail into what to look for at the junkyard.
