Take out the carpeting and sound deadener, you can put in some lighter carpeting if you want. You'll be surprised how much weight will be in some unnecessary parts. Also get rid of the cats, not needed.

Nanaimo, eh? Keep that charcoal canister. Illegal in bc to remove, and stupid as well. If you want a clean engine bay, put the canister elsewhere, like in the fender. I prefer to not smell gasoline at car shows, unless you have no gas in the tank. It's about the only emissions item I would keep.
As for pulleys, I'm not too sure what you are asking. Are you wondering what can all be removed stock, or for a recommendation aftermarket-wise? Stock, keep the rear two crank ones, all of the water pump ones (there is only one), and the alternator pulley. The other pulley's will come off with the attached item you are removing. The attached URL has a pic of Seth Wilson's car, with removed pulley's as I've said, and is using a duel alternator pulley on the top end.

Umm, your water upmp already has two pulleys on it. There is no need to add any more. To add a second belt, you need a dual ALTERNATOR pulley, and a removed air pump. Pulleys are available at most RX-7 shops, such as RX7.com and Racing Beat.

Yeah, that was a typo...I meant alternator pully. I've already yanked the air pump a while back, so I just have the one belt. I'll check out those sites and see what I can find. Thanks!

Define *really easy*.
It is by no means a nightmare. Hardest part IMO is getting the bolts off the a/c compressor and such. You need tiny hands. Since you are removing the pumps and compressor, you can remove all the lines you want to make it easier.
For A/C, you take off the compressor and all the lines, up to the evaporator case (or is it condensor...hmmmm) in the cockpit (two connectors at the fire wall). I just threw some tape over the lines, I'll probably take out the core later.
As for P/S, remove all the lines leading up to the steering rack. Get some hose, any will do, and splice the two lines coming out of the rack together.
Remove the P/s and a/c fuses and you're done.
