What is considered normal?
My car seems to work fine for me however I know nothing about rotary and that pisses me off. Mainly because I dont know when a possible problem will be arising. Now when i start my car sometimes the RPM's go all the way to 3k and stay there unless I rev the car. Other times it starts and occasionally falls down below 500 rpms and wants to die unless I rev it. Other times it starts to what I think is fine and stays at 1500 to 1200 rpm to warm up. So is this ok or does my car need a fixing? Also where can I read to inform myself of how rotary works? Thanx all input appreciated.

It's normal for the engine to rev briefly to ~3K at a cold start-up. It should then slowly drop to about 750 at full warm up and basically return to that level whenever the engine is idling. So your car seems to be pretty much operating normally, except fot the intemittent drop to below 500. That can be caused by several things. If it is especially noticable when you have a load on the electrical system (i.e., headlights on, brake lights on, and so on) the cause may be poor grounds and/or a failing alternator or battery. Otherwise, you need to do a systematic troubleshooting procedure in order to isolate the problem.
Usually, there are no quick fixes because there isn't one single cause for this problem. Get a copy of the factory service manual from one of the links in the FAQ and work through the troubleshooting procedure for poor idle problems. You should also do a search of the forum for the many, many threads dealing with idle problems and read, read, read.
