1. The search function is your friend. The beauty of this forum is that just about every question you can imagin, and haven't imagined yet, has been asked and answered at least 10 times over.

2. Way less brain damage staying in series when you do a swap. I mean, seriously less brain damage. I've done both a S4 and S5 swap, so speaking from experience.

Stay within your series. If you have an S4, then use S4 parts. If you are using a standalone and not the stock ECU, then you can use whatever engine you want.

Can I swap a Turbo engine/Jspec engine/13BT/etc into my Non Turbo?
Yes, check these links:

What Turbo kits can I add onto my non turbo RX-7?
There are no longer kits formally made at the time of this post, however there are companies from time to time that do make available non turbo to Turbo Kits. Because most of these companies stop building the kits, or go out of business in short time, it is impossible to keep active links for them.

Most people that turbo a non turbo make their own kits:
Using the stock TII turbo, exhaust manifold with spacer, NA intakes and NA ECU:

my plan is to remove everything not needed like the omp all the emissions stuff, power steering/ac, put in a parallel fuel system and standalone and want to know if one of the engines if better then the other?
i did my research already but nobody has comented on this info i would ike some pros and cons of each engine like the s4 starts with lower hp but does not have a limp mode so modification is less stressful etc...

Use the same series engine. The biggest reason the S5 turbo engine is rated at ~13 more hp than the S4 turbo is the fact that it's set up to run 2 more pounds of boost stock. The other, smaller factor is the 9:1 compression ratio vs. the 8.5:1 S4 ratio. But when modified to the same extent, both engines will produce nearly identical power.
