Undercarriage tray, top tray, thermostat water pump radiator cap belt tension clogged radiator, bent fins on radiator, improper coolant mix.
You could also have something stuck in a cooling passage, i had part of a plant growing in a water passage out of my 87, saw it when i took the engine apart.

1-Thermostat thats the best guess,
2-Check if your radiator is filled to the top. I've notice strange things happen when it not filled.
3-leaks around the water pump, make sure the seal isn't going bad.
do a compression test on your radiator and look for leaks. This was a bitch when gone through this issue. I ended up changing a water pump, radiator, and thermostat. total cost!!!! close to 500 dollars with tax. its ok safe then sorry.

plants tend to grow in those salvage yard motors, all it takes is one seed, blocked coolant passage is not uncommon if car wasn't always well taken care of,when flushing the radiator, you should pull coolant drain in center cast iron, as the rotor housing coolant passages, get real small is spots, small clumps of scale can get knocked loose and plug passage, try all the other stuff,if it dosent work,go have the coolant flushed at a dealership there exchange machine should push out any really stuck crap
