that would decrease performance by increasing back pressure, and reducing flow

Corksport sells a whole cat back for like $290 and I hear its not half bad, so I would just wait till I could afford that. It can't take too long now can it?

Yes, you can. But...

a) Your 7 will be a whole lot louder than before. Mazda put two muffler cans on that car for a reason, and just one stock can isn't going to be able to keep things as quiet as two.

b) Ditto on the previous backpressure comment. Look at the diameter of the y-pipe at the 'y.' It's tiny. If you block off one neck of the 'y,' then all the exhaust now has to go through the other passage - you're trying to push the same volume of waste gases through an opening that's half the size. Expect your power from the engine to fall (if she can't breathe, she can't make power.)

Why not keep things simple? Leave it alone and then do it properly, one time, all at once?

One thing you might want to try is to just go to a local exhaust shop. They can easily bend up the pipe and weld it in place, probably for less then $100.
