Yeah, as long as it doesn't have an air sack.

I've been thinking of putting a non-airbag wheel on my vert, but I think I read somewhere once that you lose your turn signal canceler. Is this true?

Air bag brain doesn't work, so I am not losing anything.

You also lose the horn, but this may/may not be difficult to fix.
Need to see your steering column with the wheel and surround removed and the hub of your intended wheel.

I was planning on using the S5 coupe wheel as a replacement. Is the above still the case?

The S5 wheel is probably a direct bolt on and if so, the turn signals will cancel as normal.
You'll have to figure out the horn wire but that should be easy.

Steering Wheel Swap

I am currently in the middle of swapping the S5 coupe steering wheel over to a S5 (1990') convertible w/ airbag. So far this is NOT a bolt on/off affair unless you want to lose the horn and turn signal canceler all together. The S5 coupe uses a basic horn assy. w/ a rotating plate & turn signal canceler whereas the 90' vert uses the air bag clockspring assy. (connects to the steering wheel & airbag via 3 pin wire harness) for the function of both. The clock spring assy. harness will make contact w/ the coupe steering wheel keeping it from going into place correctly. Hopefully I can post with a better update once progress is made..

I haven't worked on a vert but if I were you, I'd look into replacing the very specific vert column control setup with the whole unit from a coupe.
This would require the coupe cancel unit (on the column) and the whole gauge bezel with switches.
