Are you talking about actual undercoating on the frame, floorboards, etc., or the textured, chip-resistant coating that is under the paint on the bottom parts of the exterior body panels?
If you want to recoat the underbody (the black stuff on the underside), I'd use POR-15. POR-15 is HARD and is a really good rust inhibitor. You can even paint over existing rust with it and stop any further damage.
You mentioned "sending it out to get paint," so I assume you're taking it to a professional body shop. Any body shop should be able to match that textured coating; I've had it done a number of times on various cars.
the textured finish is called chip guard
3M, among others, sell chip guard. I used 3M when I originally did my convertible, it came in a aerosol can, follow the directions EXACTLY.
If your car is at a shop they wont need this information, if they do find another shop.

I thought there might be a window time to overcoat the chip guard, meaning you have to paint it in a certain time frame, but I could be mistaken- just check before you do it.
