Just removed my exhaust manifold and...
was wondering if the car is running correctly, what color should the insides be on the exhaust manifold? Mine is a powder white, which is telling me it's running a bit lean...am I right?
Run the car hard and shut it down without a lot of idling. Then remove the plugs (may want to let them cool down a bit) and check the color of the center insulator (red part in attached image). (You can more or less ignore the stuff that has accumulated on the rest of the plug.) That will give you a good indication of the air-fuel-oil mix and how efficiently the mix is burning.
A dull, brown-colored deposit on center insulator is what you want to see. Black means the mixture is too rich or the mix is not burning correctly for some reason such as weak spark, bad plug, incorrect plug heat range, etc. White can mean a couple of things. The mix may be too lean and the plug is, therefore, getting too hot. Or the heat range of the plug is wrong. Or you are burning a bit of coolant along with the AFO mix. Of course, you will need to do a little detective work to determine the cause of the non-brown colors.
