If I were to get some 16x8 wheels...

What offset would I need?

I can get +15, +30, +38, or +42.

I know stock is +40 so Im gonna want less than that, but I dont know how much. Can I just get +30? If my math is right, I think I can get away with that.

Stock wheel is 7" wide. New wheel is 8" wide so thats .5" on each side.
2.54cm = 1" so 1.27cm = .5" = 12.7mm
Stock offset is 40mm so ideally id want 27mm. 30 is the closest they have.

Would I be ok with that?

You would be perfectly fine. Keep in mind that you don't HAVE to keep the stock clearance. Anyway, +30 will work perfectly.
