Undo them at the OMP and carefully pull them behind the water pump.

dont take off the whole OMP, just the oil lines! there will be a bolt for each oil line. Once you get them off you will understand why its called a banjo bolt and how it works. Make sure to keep the copper washers and copper plate. There will be 4 washers and 1 plate, remember their placement, if you dont put them back, you will leak oil

would it be easier to remove the pump mounting bolts or the banjo bolts?

banjo bolts, because you will be hanging those oil lines behind the lower water pump neck. you dont need the weight of the omp stressing them. In all honesty though, I think you will eventually break a few, they are old and brittle

I wouldn't recommend that.
Once you loosen then, you basically taking the chance the copper sealing washers won't reseal again.
This will cause a big mess from all the oil that will leak.

I would remove the entire OMP.
If you're worried about the weight of the OMP, tie the damn thing up!
