Exhaust?
I have the older Greddy Power Extreme, it's pretty quiet with a straight pipe before it (3" SS down and mid pipe) (mine is turbo though). The only down side is that it has huge tips, but it is pretty quiet which is what I likes, it's just a bit louder than a stock 350z when I step on it, cruising I hardly notice it over a stocker.
Go with Racing Beat...bought one used recently for my 90 model. Everything they say here on this forum about it is absolutely true. It sounds great inside and outside of the car! Not one complaint.
Yes, gutting the cat makes it less restrictive, and therefore you will notice a slight power gain. Keep in mind that a midpipe or any sort of cat replacement (presilencer, etc.) will give better gains. There are two advantages to gutting your cat instead of replacing it.
1) Its cheaper (costs nothing because it uses what you already have)
2) If a cop checks to see if you have a cat, you legitimately do

anyone know how much of a power gain i can expect and if it is noticeable all my other upgrades are in my sig
I can't even give you a gross estimate as to how much gain this would be, but its not a lot.
any power helps i guess lol. we do have smog but not in all areas so im not affected where i live plus i have connections with inspection people
