What is this?

What on earth is this sensor, and what's the best way to remove it? I tried to get a wrench on it, doesn't seem to want to work.

From what i can see... i think its the engine temp sender

It's tucked up under the oil filter pedastal, if that helps. Kinda up and to the right of the plugs on the rear rotor.

That is for the water temp gauge in the dash cluster.

With a stubby and 12 MM deep socket with the oil press. sender removed it'll be easy..

Any particular size wrench to get it off, or just kinda find something that works and go with it?

as suggested, i believe it is 12mm. a deep socket works well.
