i was thinking of 245/40R16, too, probally the 16's, but if i were to get the 17s they would have to be 35 to fit right and not jake my car way off the ground

I'm running 205/50 R16s and it corners better than stock. Avoiding flex in cornering is the whole point of low profile tires; otherwise the tire folds under the rim and cleaves itself.
245s would be too wide to fit. The 205s on 38mm offset rims have only 1/8" between the wheel and the strut spring, and the fenders had to be sleightly modified to allow tire clearance on the outside to prevent scuffing over bumps.
anything larger than 16" on an RX7 and you get a far less comfy ride, less protection for the rims, etc.

Sidewall flex in a regular tire does place a larger contact patch on the road on a conventional, rounded tire but in a corner the sidewall can end up under the wheel rim and has no traction surface - you're just risking shredding a tire.
The straight shoulders of low profiles already place the traction surfaces of the tire on the road and the stiffness places the cornering geometry where it belongs, in the suspension.
