Make an aluminum dash. My friend did it in his race rabbit. He used a brake to bend the sheet metal at a ~90* angle and then fabricated some gauge pods that made the gauges angled to him slightly.

Actually no I scraped the old tar insulation off the wheel wells and it came out clean.
The only thing I do want in the car Is a pair of RX-8 seats and the RX-3 spedometer that I have. other than that i am kind of at a standstill.
Maybe it's time to learn how to do fiberglass work and use beadboard insulation as a base to lay the glass over. First thing to do is sit down at the drawing board and start designing what you want. You may need to reinstall the tubular framework that held the dash to give you something to work off of. I strongly suggest you reinstall the heater core and at least minimal ductwork, i.e. for the defroster and a couple of heat vents. This means you'll need the heater control for both heat, defrost, fresh air and ac.
