Because you're asking for pain and suffering.

"Please God, I've been unholy to my car. Please please cause some expensive damage to my car. I can't take it being in such a good state of repair."

Undershielding/undertray.
It preventsthe outside elements from entering into the engine compartment.
Things like rocks and other debri. It also keeps water from getting into the engine compartment and near the belts and such.

And it also vents cool air into the engine compartment.

Thanks
Heat shields weigh very little, bother with them if one must. I was refering to the under tray that aids in cooling. Removing it is just plain ignorance.

Replace single alt/waterpump pulleys with duals or a serpentine setup (i.e. Atkins) to reduce slipping.

Doing the rats nest includes a lot of stuff, so at least do that. As Kim mentioned clean up the wiring unless you ever plan on going back to a stock setup later in life.

As mentioned by the doc, keep that under tray. Its vital for you and your engines comfort.

What you remove depends on your goals. If you want a DD driver that is easy to live with and drive you may want to keep the AC or if you have to pass emissions you may not have a choice. For racing anything goes but I don't think that was the OP intent when he posted this.

ok so far there is

1-Rats nest
2-Cold start assist
3-thermal reactor/header
4-Air pump
5-A/C system(comp,hoses,outer pulley etc)
6-Switch to an e-fan
7-relocate battery to bin
8-cruise control
9-power steering
10-replace pulleys to the dual serpentine
11-clean up the wiring harness

I saw some of you getting carried away with "removing".
Raptor13x was only talking about the engine bay NOT weight reduction.
So, is there anything else that should be added to the list?
Im seriously looking into this and need all the tips I can get.

could always go with flush mount headlights so you can remove the motors and those crappy linkages that mazda rapes us for on the price, lol. Also, going with the 2nd gen fuse box will clean it up a bit...

Gentleman, The fat girlfriend I agree with, but after that please keep in mind that you are destroying a piece of art:

This is a photo of a fully functioning stock GSL with all the option, cruise control, ac, ps, air pump and rat's nest still doing their job. Here in NE Georgia, with lots of highway driving to do and some hot traffic too, it's nice to have these things (did I mention the fully functioning Clarion sound system? Love it.)

To remove any one of these devices, or worse, to do it half-assed so the car actually runs worse, only lessens the value and enjoyment of one of the greatest cars ever designed.

Now, back to the discussion.

Ray

The only reason I would remove the Rats nest is because pollutant stuff is hard to fix. On a Fuel Injected engine thats a different story. My rats nest was already removed when I got my car from Ralph, Jose did the removal at joses rotary.

The A/C , the Cruise control and power steering is stuff I love to have. I understand the highway driving because my car is going to be going on 5 hour trips alot.

No one has mentioned the headlight washers...I still have mine, but only coz they still work. Most dont. There's a few less wires to worry about. you can always relocate the coolant overflow somehwere less obtrusive, if you want to make your engine bay look nicer too. Battery REALLY frees up alot of space.
