is it at all possible to run a stock nikki with bridgeport and not have it explode

yep, the IMSA RS class basically was that combination. you had to run the stock carb and intake, but ports and exhaust were open.
when you have a Ford Pinto you get ~20 more hp or something, but the Rx2/3's gain about 80, so they won a lot

It will take a lot of work in the carb.

Group A RX-7 homologation had Nikki carbs and bridge ported 12As. It was not ideal and they had factory backing behind getting the carbs to work.
