Check out Rx7Carl and Pratch's tutorial on removing the rat's nest:
http://maz_tutorials.ten15.net/
And the guys are right. Typing all in caps is the online equivalent of screaming at the top of your lungs, but it's okay if you didn't realize that. Everyone learns somewhere.
The Air Control Valve Block-Off Plate is available at RacingBeat. Go to www.racingbeat.com , click the rotary picture, then the 1979-85 licence plate. Drop down the box to "Intake Components" and look for "AC&CV Cover Plate 1981-92 RX-7 Non-turbo "
When you do remove the Air pump, yes you have to hollow or remove the cats, because they'll clog otherwise. Make sure that there are no emissions tests in your state/province if you do this, because if there are, you stand NO chance of passing them without the air pump, or cats.
And give yourself plenty of time to do this work. When doing this tutorial it's common to end up with vacuum leaks you have to track down, which takes unknown amounts of time. Give yourself a whole weekend to work on it, just to be on the safe side. That way you don't come in saying "I need my car to be running in two hours, help, it won't idle properly".
Good luck,
Jon
