If I was trying to keep it truly original I wouldn't have done 90% of the stuff I've done to it.
And my upholstery is not pink!
Since you did a great job in keeping the stock appearance and holding on to a stock smog-legal motor, keeping the plates, hoses and wire looms black will make it stand out more. I would have gone that route as suppose to some "bling-bling" look in the engine bay. Just a constructive criticism. I admire your work and I wish I can keep my motor stock but I cant drive 55mph. lol

It's artistic difference, is all, sir. I like a little bit of bling in the engine compartment.
However, I would point out that cast-iron grey IS the stock color for plates on an 80.
I still have the (used up) original plates from my motor, and they were iron-gray on the exterior, not black. I think (not 100% sure) that grey irons started with nitriding.
In fact, here are two pix from my 2001 build, when the original plates came out of the car.

1- Yes the rack is used
2- I do downhill and trail riding also snowboarding
3- Last month along i went every weekend including last weeks storm. I am going again wednesday Big bear is getting fresh snow sunday night!!!

Yeah, they are fairly good on gas and do have some good power. Unfortunately, I like to think that I have an rx7
often "get up to speed" a little bit fast and think I have a much faster car than I actually do. 
I love your rx7 too, its definitely one of the ones that led me to want one!!
