Wheel width = tire width???
I am really looking for some sort of table or database that shows what size tires fit what width rims. I haven't narrowed down which rim I want yet, so I am just looking for some kind of general guide.
ex. Will 275 width tires fit a 7.5in rim?
Anybody got a link?

Look at the spec sheets for the tires you are considering and the rim width range will be listed for each size. You can find the spec sheets for many tires on TireRack.com or the tire manufacturer's web site.
275s will not work on 7.5 wheels in general.

Generally you want the rim width to be 90% of the tire section width for ideal tire sidewall support.
Convert mm to inches by dividing by 25.4, so 275 mm converts to 10.8 inches (rounded to the nearest 1/10 inch). 90% of 10.8 inches is 9.7, so this means you could run either a 9.5 or 10 inch-wide rim for a 275-mm wide tire.
This general rule of thumb will work for any tire size, and you won't need any books, just a calculator

I thought for best handling you wanted the widest rim that your tire would fit over? I know it looks goofy but it provides for zero chance of the tire buckling under.

But when you run super-short sidewalls like that, you lose forward traction and the traction curve is too peaky. (grip... grip.... OH ****!!!!)
Call me old fashioned but I like to get the car up and slide all four tires around the corners... anything less feels like I'm not doing enough Hmm maybe I should look for some bias-plies for my next set of track tires?
