This may seem like a newbie question, but what exactly is the purpose of toe/trailing links?

You guys really don't know what you are talking about regarding the toe links. If you won't take my word for it, ask DamonB (absentee supermoderator). He is a nationally competitive autocrosser, and a high level road racer. He has the same opinion as I do.

Ernie: Regarding drag racing, please explain to me how an aftermarket toe link will improve performance

Together with the trailing arms they keep the tires flat for more contact patch. With it stock the tires toe out. Hope you understand now.

I agree that stiffer trailing arms will help for drag racing. I don't agree that aftermarket toe links will do anything better that new oem links.

Just a simple case when advertising works.
When a company tells you that you need product X, and you've done no research on your own, you're willing to buy into it. Whether it offers an improvement or not doesn't really matter. You bought their product, and they made money :P
