Well I am going to be building up a FD real soon and I will be doing a lot of 40-120 mph runs, and I want a turbo that is a very fast spool, and nothing like a t88 type of size. What do you guys recommend?

there's no easy answer for a custom setup. It depends on manifold/wastegate combination as well as the turbo, and the exhaust size as well as the turbo itself.

Save yourself some trouble and just buy a T04Z kit, or you need to spend hours researching for a custom build.

 

35r would be a great choice with a decent hotside

 

To achieve your power goals you should definately go with a T04R/Z or anything with a 67mm compressor wheel. That will get you 500 easy. A 35R will do it as well but will take more boost to get that 500 number but then again it will spool faster. Research turbos a little more.
